Ingredients (Serves 4)

  • Grated coconut – 1 cup

  • Onions – 2, sliced

  • Green chilies – 2

  • Dry red chilies – 6 to 8

  • Black peppercorns – 6

  • Poppy seeds – 1 tsp

  • Coriander seeds – 2 tsp

  • Fennel seeds – 1 tsp

  • Cloves – 3

  • Cinnamon – 1 small piece

  • Tamarind pulp – 2 tsp

  • Oil – 2 tbsp

  • Salt – to taste


Method of Preparation


  1. Roast the spices

    • Heat 1 tbsp oil in a pan. Roast coconut, red chilies, coriander seeds, poppy seeds, fennel, peppercorns, cloves, and cinnamon until golden and aromatic.

  2. Make the masala

    • Grind the roasted mixture with tamarind and a little water into a smooth paste.

  3. Cook the vegetables

    • In a deep pan, sauté onions until soft. Add the chopped vegetables and cook with salt until half done.

  4. Add the masala

    • Stir in the ground paste and add water to adjust consistency. Let the curry simmer until the vegetables are fully cooked and the flavors blend beautifully.

  5. Finish and serve

    • Garnish with fresh coriander leaves. Serve hot with steamed rice, Goan sannas (fluffy rice cakes), or chapatis.
